The essence of El Granero is the one of a passenger kitchen, a shelter and a place that invites guests to deep into the intricacies of time and space of the old Granada and its surroundings. It is also an open space for art and culture of the city, a meeting space.
In a "global" world, at a time when we are missing the opportunity and the sensitivity of the good, healthy food to which, with very limited resources, we were used by the past generations, we wanted to help restore and revitalize Granada cuisine and by extension the Andalusian one.
Andalusia is a land rich in its ancient tradition and diversity. Along with widespread dishes that became justly famous, there are hundreds of gastronomic delights almost lost, extremely local, linked to a particular microclimate, a specific micro-culture, a special celebration. Granada is, in this sense, an Andalusian workshop of cuisine, since it is the most diverse province of Andalusia.
From northwest to southeast and east to west, we find from early-season and subtropical fruits to prized beef cattle grazing in a landscape almost steppe. Cuisine from the mountain, see, harsh high plateau, the fertile plain of peasants, shepherds, fishermen. Moorish, Jewish, Christian kitchen, mixed by the art and the need for centuries. 
The challenge we set ourselves was to make a simple cuisine, rooted in tradition, with a value for money excellent and an important component of innovation.
